2 Cups desiccated coconut (preservative free, check the label) (buy on iherb or amazon)
10 Medjool dates pitted (buy on iherb or amazon)
3-4 tbsp Coconut Oil melted (buy on iherb or amazon)
½-1 tsp salt (buy on iherb or amazon)
1 tbsp Cacao nibs (buy on iherb or amazon)
slice tin, or rectangular dish lined with baking paper (depending on the size of the dish, you can make thin or thick bites 40 or 60 pieces)
Instructions
Place desiccated coconut, Medjool dates, 2 tbsp melted coconut oil and ½ tsp salt in food processor and mix until combined
Take out 1 tsp of the mixture and form a ball, if the mixture is too dry, add more coconut oil and recheck. The mixture should form a ball when pressed together
Taste the mixture for the right balance of sweet & salty, add the remaining salt if required
Place half the mixture into a silicone slice mould (or line a slice tin with baking paper)
Press down firmly and use the back of a spoon to even the layer out
Scatter the Cacao nibs over the top
Using a spoon, evenly sprinkle the remaining mixture on top
Press down firmly and use the back of a spoon to even the top layer out
Place in the fridge for approx 30mins until firm, you should be able to lift the entire slice out easily
Cut into even bite sized squares
Store in the fridge for approx 2 weeks
