Fluffy 2 Ingredient Banana Pancakes
 
 
Ingredients
  • one ripe banana (with black spots is best)
  • 1 large egg
  • coconut oil
Instructions
  1. heat a non stick pan on low heat with 1 tbsp coconut oil
  2. blend banana and egg until smooth (I used my magic bullet)
  3. pour into a mixing bowl
  4. using an electric egg beater, mix until soft peaks form
  5. increase the heat to medium (the pan should be hot enough to slowly brown the mixture but do not allow the mixture to bubble or sizzle when it hits the pan, the pancake will turn out deflated and not fluffy and oozy)
  6. using a ladle, spoon the mixture onto the pan (cook one at a time)
  7. allow to cook for 1-2 minutes, there should be no bubbles in the mixture
  8. gently lift one side to check for browning, once it has reached a nice golden brown colour, slide it onto a serving plate and fold over
  9. the light fluffy mousse egg and banana mixture on top should still be soft and slightly ooze out
  10. serve with your favourite fruit or toppings
  11. the pancake is incredible light and has a melt in your mouth texture
  12. it may take a few goes to get it right while the pan 'warms' up, as with the standard banana pancakes then tend to be a little difficult to slide out of the pan if you don't have a non stick pan or enough oil
