Fluffy 2 Ingredient Banana Pancakes

I’m so grateful to whoever invented the 2 ingredient pancake, a banana and an egg with no sugar or dairy needed. Genius!ย These two items are staples in our house so we always have them on hand, so when I discovered Jean Imbert’s fluffy omelette recipe on Jamie Oliver’s YouTube (watch itย here) I immediately thought to try making a fluffy 2 ingredient banana pancake. Here was the result:

If you haven’t seen or heard about Jean Imbert’s fluffy Omelette, it’s worth watching the video. You basically whisk 3 eggs for about 3 minutes until you get a mousse like consistency and when you fold it over, the moussey egg mixture oozes out. It’s incredibly light and amazing especially with some cheese lightly sprinkled in the middle before folding.

For my fluffy 2 ingredient banana pancakes I used electric egg beaters instead of hand whisking. It’s less tiring for me ๐Ÿ˜‰

FLUFFY 2 INGREDIENT BANANA PANCAKES

You will need:
  • one ripe banana (with black spots is best)
  • 1 large egg
  • coconut oil
Method:
  • heat a non stick pan on low heat with 1 tbsp coconut oil
  • blend banana and egg until smooth (I used my magic bullet)
  • pour into a mixing bowl
  • using an electric egg beater, mix until soft peaks form

Beat the banana and egg mixture until soft peaks form
  • increase the heat to medium (the pan should be hot enough to slowly brown the mixture but do not allow the mixture to bubble or sizzle when it hits the pan, the pancake will turn out deflated and not fluffy and oozy)
  • using a ladle, spoon the mixture onto the pan (cook one at a time)
  • allow to cook for 1-2 minutes, there should be no bubbles in the mixture
  • gently lift one side to check for browning, once it has reached a nice golden brown colour, slide it onto a serving plate and fold over
  • the light fluffy mousse egg and banana mixture on top should still be soft and slightly ooze out
  • serve with your favourite fruit or toppings
  • the pancake is incredible light and has a melt in your mouth texture
  • it may take a few goes to get it right while the pan ‘warms’ up, as with the standard banana pancakes then tend to be a little difficult to slide out of the pan if you don’t have a non stick pan or enough oil
