Herbie Spiced Rolled Eggs

This is a really simple, refreshing breakfast or lunch that you can make quickly with limited time and also great as a portable lunch or snack to take to work. The options are endless and only limited to what herbs & spices you have in your pantry.

I  like to have these eggs with a fresh salad or veggies, usually dressed in extra virgin olive oil, balsamic or apple cider vinegar. It also works perfect as an emergency protein snack. You could pack it with some carrot & cucumber sticks. If I am eating them at home, I like them medium, but if I am taking them out, its easiest if they are hard boiled as they need to be robust enough to get bumped about in my bag with out all the yolky goodness exploding.

To boil the eggs medium or hard, I use a really cool egg cooker to cook my eggs perfectly each time. You just pierce one end of the egg, place the eggs on the cooker, measure out the water based on whether you want soft, medium or hard boiled eggs and press start. I haven’t boiled eggs in the saucepan for as long as I can remember so if you are using the pan, I found this chart for cooking times that might help.
I ran out of salads so we just picked some Vietnamese herbs from the garden
Makes 6 eggs (for 2-3 people)
You will need:
6 free range eggs
3 tbsp toasted sesame
1 tbsp sumac
1 tbsp oregano
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne (reduce or replace with paprika to reduce spice/heat)
1 tsp chilli flakes (optional)
1 tsp salt
A bunch of salady things (whatever herbs, salads or veggies you have on hand)
Preferred dressing (I use some EVOO & balsamic vinegar or ACV)
  • Boil the eggs to your liking
  • Lightly toast 3 tbsp of sesame until golden brown, set aside
  • Place remaining herbs and spices in a grinder (like a magic bullet) and grind until mixed together
  • In a bowl, add the ground herbs & spices with the toasted sesame seeds
  • Peel eggs, and gently roll in the mixture
  • Divde the washed salad & fresh herbs on 2-3 plates, sprinkle salad (herbs or veggies) with remaining spice mix then drizzle with dressing of choice
  • Divide eggs and enjoy!
